自製腸粉, 炸両

最近在家照顧兩個囝囝, 每日要為他準備早餐, 但沒埋由日日都食麵包, 偶而要攪攪新意, 於是上星期某日就整腸粉.

對上一次整腸粉已經是三年前了, 自從教識姐姐整之後, 我就冇整過.

太耐冇同腸粉打交道, 整得好慢, 腸粉有厚有薄, 有長有短.

知道自己手腳慢, 早一晚整定, 朝早只需蒸熱.


囝囝喜歡配甜醬, 我還特地去買甜醬來給他點.  家裏沒芝麻醬, 改用花生醬加麻油, 味道尚可接受, 至少囝囝覺得好味.



下晝又貪得意整炸両, 油炸鬼之前買存在冰箱, 先用焗爐焗熱, 再蒸腸粉來包.

第一次整, 腸粉皮厚咗啲.  原來要包油炸鬼喺裏面係幾難的, 雖然和在香港吃到的有大距離, 但能自己在家吃到都已經很滿足. 

囝囝放學後就食炸両做下午茶, 還吃得津津有味.


我吃腸粉或炸両都只放少量生抽和麻油, 最怕外面吃到浸在一大灘豉油裏, 食到最後咸到飛起.

上個月就在腸粉之家吃到一碟浸滿帶苦味醬油的炸両, 非常難食, 也就是它激發我要自己整炸両的決心.

  3. 我已經2年冇整過腸粉, 你的炸両 ... 骨骨骨骨
    Which pan do you use to 整腸粉?
    [版主回覆05/19/2010 08:51:00]I used a stainless steel 6"x10" tray.  That's the only one that I have that can fit into my wok.  I don't have 腸粉布or 腸粉盆.

  4. I love腸粉&炸両, homemade腸粉has a hint of rice sweetness plus freshness, really 骨骨骨骨吖!
    [版主回覆05/19/2010 08:53:00]I love 腸粉and 炸両very much too.  Homemade 腸粉 is so much better than the 腸粉 available here (except restaurants like Crystal Jade).  Those available in the shop here are usually as thick as 河粉, so not smooth enough.
