但平嘢唔好嘥, 買來整酵素, 反正要加糖.
入樽後幾個鐘已經出好多水, 糖亦溶得七七八八.
第四日出好多泡, 見到咁多泡真開心. 跟住我每日都去探吓佢, 每次睇到啲泡泡就好興奮好期待收成.
以前整酵素, 我都係交俾姐姐去睇, 每日開蓋透氣既任務都係姐姐做的. 但自從見到呢樽咁多泡之後, 我對酵素既興趣大大增加, 因為見到啲泡泡真係好開心架.
星期日收成, 失望, 唔夠甜唔好味. 可能啲奇異果酸啦, 要比平時放多啲啲糖, 或者下次我加啲其他生果落去. 唔好味既我留自己飲啦, 仲有一樽梨今日收成, 希望會ok啦, ok就拎去俾奶奶, 因為佢啲便便唔多暢通.
我覺得好似整緊天然酵母咁呀.......

If the fruits are sour , use 3:1 ratio for fruits to sugar. I tried to cut sugar once (way too little), and the enzyme turned out bitter. And you should put in some lemon too, that is for disinfecting and for overall fermentation.
ReplyDeleteEven though it is sour, the benefit is the same, dont waste it. DD always complain that my enzyme is too sweet, not knowing if not enough will not turn out...
[版主回覆11/02/2010 18:20:00]Actually I used more than 3:1 this time, 550g kiwi to 200g sugar and I always add in lemon. The enzyme isn't sour, just not as sweet as the strawberry grape and not good tasting. Just harvested the pear today and the alcohol taste is still quite strong even though we open the bottle to let it breath for at least 5-10 mins everyday.

無整過既人,係唔明見到果種泡泡既開心架!!!我啱啱果支桃酵素又係勁多泡,多到好似coca cola咁...唔開蓋都見到D泡係咁標上黎,一開蓋仲標得勁添呀...真係勁興奮!!!

ReplyDelete[版主回覆11/10/2010 09:24:00]全部檸檬都發霉定係一兩片咋, 如果只係一兩片, 夾出嚟再加啲新鮮既, 再加少少糖喺面就得架啦, 唔駛倒晒架. 仲有如果啲霉霉係白色既係正常冇問題, 黑色先要丟. 可能你啲生果未乾, 或者其他用具未消毒夠, 又或者糖放唔夠. 你post咗我去睇睇.
