豆醬蒸魚

農曆新年大魚大肉後, 是時候回歸平靜, 食清淡一點.

來個豆醬蒸魚吧.

豆醬挺鹹的, 記得要混入糖才搽在魚身上來蒸才會好吃喔!



這種調味用來蒸沒那麽新鮮的魚就最適合, 能蓋過腥味.  這次用了沙猛(leatherjacket fish), 這魚本身味道很淡, 小時候我爸爸都會用蒜蓉腐乳來煮, 現在用豆醬來蒸也很好吃.

這就是我用的豆醬, 是黃豆做的, 味道是很鹹的, 和麵豉醬不一樣.  星馬一帶都很愛用這醬來煮食, 尤其是蒸魚.  在網上找tau cheong 或tou cheong 就可以找到有關的食譜.  這瓶是我用的豆醬.

    細個好鍾意食呢隻魚,因為冇咩骨,媽咪會用油鹽水薑蔥煮
