Grill pan 開張


想買grill pan很久了, 早幾個月見到LC的有減價, S$140左右, 有點心動, 但最後都沒買.之後在網上見到有人說Ikea的也很好用, 而且側邊較高, 油不會彈得那麽厲害剛好有S$40宜家禮卷要到期, 自己加多廿九蚊就把它捧回家我自己一個人去買, 沒想到是那麽重, 不過這種要重才好吧grill pan不錯, 沒有nonstick coating, 燒得再熱都沒問題, 反正grill就是要夠熱嘛另一個好處是可以直接入焗爐, 而且面層有enamel coating, 用後不用塗油




第一次試用, 不想浪費錢去買貴價牛扒, 只用急凍豬扒來試豬扒用孜然粉, , 香草, 黑椒, 少少糖來醃, 煎前再加入食油生鐡pan傳熱真的很快, 把豬扒放入, 很快就可以翻面, 而且完全唔痴鑊第一次用grill pan, 每次翻都要仔細想想角度對嗎, 還好豬扒上的格仔紋尚算滿意.  唯一問題是煮時滿室都是油煙, 可能是我下油太多.  煮完才知道原來只要肉面搽油, grill pan上可以不加油.  

剛好冰箱裏有一盒English breakfast sausage, 也拿出來一齊煮配菜的new potatoes只用水烚熟, 才淋上橄欖油, 鹽和乾parsley (一時大意, 如果加rosemary會更香).  這餐扒餐純屬即興, 沒有特地去買菜, 雪櫃裏只有芥蘭苗, 用中式炒法炒熟來拌碟就算了.





這是囝囝的囝囝見到這碟晚餐時, 興奮地大叫: "Wow, steak!".  他以為扒上有格仔紋的都是牛扒雖然後來知道是豬扒, 他仍然食得好開心.



本來想煮leek and potato soup, 但見配菜已經是薯仔, 就改成leek, 椰菜花和紅蘿蔔湯, 多點菜吃健康點.

  5. 你提到一個有趣話題,nonstick and enamel coating, 我在諗分別煮出來的食物會有咩唔同呢?我最近買了ceramic wok,一樣係nonstick, not Teflon coating. enamel coating 未用過佢,成日以為係勁黐添!
    [版主回覆10/05/2011 15:46:22]我諗enamel coating 係防锈, 應該唔係nonstick, 但可能如果個鑊燒得夠熱先放食物上去就冇咁易痴啩, maybe好似炒河粉既原理 (my guess only).

  7. 我都係啱啱買左ikea呢個grill pan呀,好好玩...其實話你聽,唔關事個grill pan有無落油...我整過filet mignon(無咩脂肪既位置),又整過羊扒同鴨胸...全部都只係喺肉上面掃油...fillet mignon grill既時候只係得好少好少既煙...但羊扒同鴨胸就真係好恐怖,大煙過我上次喺屋企BBQ幾倍...所以我覺得大煙與否,係同本身舊肉多唔多脂肪有關...就算grill pan無落油,但塊肉脂肪多,都可以超大煙!! 最慘係...我無抽油煙機,第二日個廚房仲係一陣味...上次BBQ都無咁勁呀真係!!
    [版主回覆10/06/2011 14:39:38]我真係冇expect咁大煙架, 好彩我個抽油煙機夠力啫同埋廚房有門, 食完飯個廚房已經冇晒味. 不過大煙我都會再玩過, 見到啲靚紋就開心, 好有成功感.

    [版主回覆10/25/2011 14:16:42]佢個說明書話因為有enamel coating, 所以唔駛抹油. 不過我play safe, 乾後都抹番層油.
