雪菜火鴨絲窩米

上個月姐姐返鄉下時, 我留在家裏湊仔就三餐都要煮.

午餐簡簡單單炒飯麵之類, 其中一日煮了雪菜火鴨絲窩米.

直至四月以前, 我都從來未見過未切碎未煮的雪菜.  四月返香港時, 同媽咪話我要買雪菜返新加坡, 因為呢度冇得賣.  去街市先知原來雪菜都有兩種, 有綠色同啡黃色的, 綠色貴啲, 就買綠色啦, 雖然我都唔知兩隻有乜分別.



我自己的簡單煮法: 米粉先浸軟. 雪菜浸水以免過咸, 切碎, 用油加薑片和少許糖炒香, 加入火鴨絲, 兜勻, 下米粉和上湯煮滾冚蓋焗至米粉夠軟和入味. 起鍋前再加入預先炒熟的銀芽.

我鐘意放好多好多銀芽, 你哋見到既只係小部份, 有好多銀芽放咗係碗底.  不過每次摘銀芽都要摘好耐, 但呢樣嘢我每次都堅持的, 因為我唔鐘意見到有芽菜頭和尾在我的食物裏.  嘻嘻, 呢方面我係比較挑剔. 

我囝囝同我一樣, 嗰日有條漏網之芽菜連住芽菜頭在他的碗中, 佢就用有少少質問既語氣問我:"媽咪, 點解呢條芽菜你冇摘咗個頭去呀?" 俾佢激奀.

    [版主回覆06/03/2010 08:35:00]I did try but I ended up throwing away half the packet because he just peels each one into mm length small piece with head and tail all mixed inside.  But when he's older, he's going to have to do it.

  3. Come and think of it, I served this dish when you guys came over to my place for dinner the first time, right?  Just love it, and Gigi will be bringing some more for me when she comes over for a visit, can't wait.
    BTW, you can fry 雪菜 with lots of garlic and go with pork, it goes well with porridge.  Actually it can be used for any savory dishes, cut into cubes and fry with minced pork for the kids is also nice.  I like it fried with dried chilli and stripped pork.... ahhhh
    [版主回覆06/03/2010 10:03:00]I've only been to your place once and it was spaghetti night so I don't remember having this dish.  Ok, I'll ask my maid to cook 雪菜the way you suggested.  Heehee, I'm leaving all the cooking to my mind these few weeks.  Need a break.

  6. 您住個頭都街市呀? 我個度有雜貨舖. 有好大缸醃好的雪菜/炸菜/咸酸菜賣.
